Homemade Pepperoni

I mentioned in the post here that I was going to try a homemade pepperoni recipe I found at a site called Tammy's Recipes.
This appealed to me for several reasons. First, I normally buy pepperoni at Aldi's which is a 40 mile trip I can't always make. Second, I love the idea of "make it yourself recipes." Anything that I can make from basic supplies I have on hand is a plus for me. Third, I have control over what goes in it!
The picture above is how it turned out. I had everyone try some and they all thought it was really good. Hubby suggested it would be great on crackers, too. I loved that it was not greasy, although I had to use 80% lean hamburger because the store didn't have anything leaner.
Next time I will make my rolls a little smaller around. I thought they would shrink more than they did. I will also lower the rack in my oven. I think it got a little too brown during the last hour of cooking. My quick cost analysis was about $3.45 for approx. 100 slices of a much healthier version of what I usually purchase! Below is a pic of the mini pizzas I made for lunch boxes. Yum!

I just got a food slicer, and I was thinking how great it would be to be able to buy the sticks of pepperoni and get it cheaper. Now I'll have to try this because I'm with you - if I can make a "convenience food" myself, I'm going to do it. I like a challenge. :)

Now you'll need to make your own mozzarella cheese!!

We just mad our first batch from Tammy's recipe and am very pleased with the result. I sliced it right out of the oven, but the slices were really too thick. After I refrigerated it, I broke out my food processor and sliced them nice and thinly!
